Sheriff Gil Gilbertson and Kirk McKenzie, Founder of Defend Rural America will provide a frank discussion of the problems of rural counties and solutitions. I'm one of the "celebrity eaters" taking part in Thrive's "Eat Local Week". I'm not as devoted as Phillip Yates over at ACCESS, (who is eating NOTHING but local...good for him) but Linda and I popped by the co-op yesterday, and picked up some gorgeous local produce from Fry's Farms.

Yesterday we had local pork (Butcher Shop in EP) along with local fried kale and garlic. I loved it. Linda's not as much a kale fan, but then again, she doesn't like cooked spinach, either, which this resembles. (But a bit of a "meatier" texture)

Eating local can be more expensive, but I figure the more it's done, eventually the quantities ramp up, and prices become more reasonable. Give it a shot!
